Consolidation and the Danish organic food market -- analysis of actor motivations and their effects on the selection of organic food

open in viewerDuring the 1990s, the Danish organic food market experienced tremendous growth. As a result, there has been a shift away from small, idealistic pioneers due to an influx of large, business-oriented producers. This project studied the effects of this shift on the market dynamics between producers and retailers and the selection of organic food in supermarkets. Surveying and interviews were used to determine what organic products were stocked and why. Recommendations were made on how small producers can remain viable.
