Regresando a la Tierra: Implementing Nutrition and Garden Learning for At-Risk Students in Ecuador

Our team worked with Fundación El Arenal, an after-school program for low-income students in Cuenca, Ecuador, to incorporate garden and nutrition learning activities that teach healthy dietary habits. Families with fewer resources generally have less access to healthy food options essential during child development. To help teach the importance of healthy food choices, we piloted hands-on activities that present nutrition topics in an engaging way. We conducted interviews and observations with the organization’s staff to analyze their schedule, understand their capabilities, and determine the most feasible implementation of this program. We recommended appropriate times, administrative changes, and strategies to implement garden and nutrition learning in their regular weekly activities.
