open in viewerThis project focuses on food security and malnutrition among students around Cuenca, Ecuador, and provides recommendations on how to alleviate these problems by providing guidelines for expanding and improving school gardens. After extensive research and interviews with subject matter experts, the project team formed six major recommendations to improve the diversity and nutrition of the plants in school gardens. These recommendations focus on growing native plants, producing a variety of different crop types, practicing water conservation, implementing composting methods, growing medicinal herbs, and maintaining a management system. These recommendations, if applied and sustained over time, are meant to help alleviate malnutrition and food insecurity for students in the region.
