Selective removal of ethanol from wine

Public

Current production of alcohol free-wine could be improved. Use of zeolites, molecular sieves, to selectively remove ethanol could be an improvement. Zeolites were added to ethanol and water solutions along with wine and removal capabilities were tested. Testing was performed using gas chromatography. Other changes in wine were tested by infrared spectroscopy. Results showed zeolites are more effective at the removal of small amounts of ethanol rather than removal of large quantities. Treating with zeolites only slightly changed wine composition.
