North Country Hard Cider: Apple Aging Study

open in viewerEffects of long term controlled atmosphere (CA) storage were examined in Honeycrisp and Rhode Island Greening apples. Apples were stored under varying conditions of atmosphere and temperature and tested for hardness, pH, and infrared spectra. IR results revealed increase in acetaldehyde and/or ethyl acetate in CA apples. Literature shows that apples in CA undergo fermentative metabolism, leading to buildup of undesirable compounds. It is recommended to remove apples from refrigeration for eight days to reverse effects of fermentative metabolism.
