Analysis of Smoak Tannins
PublicE&J Gallo (Gallo) currently has a large waste stream that is a by-product of their oak toasting process. These materials are currently being stored and contain components that are of interest to the company. Since the process comes from oak, Gallo would like to use this existing waste stream to deliver a new tannin product differentiation tool. The goal of this project was to develop various isolation and extraction techniques in order to separate flavors in the waste stream.
